When local farmers share their late-summer harvest, magic happens in the kitchen! This week, a bountiful gift of fresh farm zucchini inspired a rich, fudgy creation that proves art isn’t just for canvas or stones—it belongs on the dessert plate, too.
The Secret Behind the Decadence
Zucchini is nature’s ultimate baking secret. Grated finely into dark cocoa batter, it melts away seamlessly as it bakes, creating a dense, velvety crumb without heavy oils. Baked into an elegant Bundt ring, this dark chocolate cake is draped in a silky dark chocolate ganache, finished with a delicate dusting of mini chips, and framed by a pillowy ring of whipped cream.

To add a playful touch for our gallery showcase, our favorite hand-painted owl rock found a cozy perch right in the center of the cake ring before slicing! It’s the perfect blend of garden art, home baking, and farm-fresh ingredients.

Recipe:
2 cups flour (or 1:1 gluten-free flour)
\frac{1}{2} cup dark cocoa powder
1\frac{1}{2} tsp baking soda & \frac{1}{2} tsp sea salt
1 tsp espresso powder (optional)
\frac{1}{2} cup melted butter or coconut oil
\frac{1}{2} cup avocado or neutral oil
1 cup brown sugar & \frac{1}{2} cup pure maple syrup
2 large eggs & 1 tsp vanilla extract
2 cups finely shredded fresh zucchini (un-squeezed)
Topping & Ganache:
1 cup dark chocolate melted with \frac{1}{3} cup heavy cream or coconut milk for the ganache
Mini chocolate chips for sprinkling
Fresh whipped cream for the border
Instructions:
Whisk dry ingredients in a bowl. In a separate large bowl, whisk butter, oil, sugars, eggs, and vanilla.
Stir dry ingredients into wet, then fold in 2 cups of shredded zucchini.
Pour batter into a greased Bundt pan and bake at 350^\circ\text{F} (175^\circ\text{C}) for 35–40 minutes until a toothpick comes out clean.
Cool completely, pour warm ganache over the top, sprinkle with mini chocolate chips, pipe whipped cream around the base, and chill overnight for maximum fudginess!
